Ingredients
– 12 medjool dates, pitted
– 1/2 cup ricotta cheese
– 2 tablespoons honey, plus more for drizzling
– 1/4 cup shelled pistachios, chopped
Instructions
1. – Cut the dates in half lengthwise and remove the pits.
2. – In a small bowl, mix the ricotta and 2 tablespoons of honey until well combined.
3. – Spoon the ricotta mixture into the center of the date halves.
4. – Top the stuffed dates with the chopped pistachios.
5. – Drizzle the stuffed dates with additional honey, if desired.
