Ingredients
– 1 pound heirloom carrots, peeled and sliced into 1/2-inch thick rounds
– 2 tablespoons honey
– 2 tablespoons yuzu juice
– 1 tablespoon olive oil
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons chopped fresh parsley (optional garnish)
Instructions
1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. In a large bowl, combine the sliced carrots, honey, yuzu juice, olive oil, salt, and pepper. Toss to coat the carrots evenly.
3. Spread the carrots in a single layer on the prepared baking sheet.
4. Roast for 18-22 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through.
5. Remove from oven and transfer to a serving dish. Garnish with chopped parsley, if desired.
6. Serve the Honey-Yuzu Glazed Heirloom Carrots warm or at room temperature.
Notes
For a variation, you can add a pinch of red pepper flakes or crushed garlic to the glaze. The carrots can also be roasted a day in advance and reheated before serving.
