Ingredients

– 1 pound carrots, peeled and sliced into 1/4-inch thick rounds

– 1 cup apple cider vinegar

– 1/2 cup honey

– 2 cloves garlic, minced

– 1 teaspoon crushed red pepper flakes

– 1 teaspoon kosher salt


Instructions

1. In a medium saucepan, combine the apple cider vinegar, honey, garlic, red pepper flakes, and salt. Bring the mixture to a simmer, stirring occasionally, until the honey is fully dissolved.

2. Add the sliced carrots to the saucepan and stir to coat. Reduce heat to low and simmer for 5-7 minutes, or until the carrots are tender but still have a slight crunch.

3. Remove the saucepan from the heat and let the pickled carrots cool for at least 30 minutes before serving.

4. Transfer the pickled carrots and brine to a clean jar or airtight container. Refrigerate for at least 1 hour, or up to 2 weeks, before serving.
