Ingredients
– 2 packages instant ramen noodles (discard seasoning packet)
– 4 cups low-sodium chicken or vegetable broth
– 1 cup shredded cooked chicken (or tofu for a vegetarian option)
– 1 cup thinly sliced mushrooms
– 1 cup shredded carrots
– 2 green onions, thinly sliced
– 1 soft-boiled egg, halved (optional)
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon chili garlic sauce (or to taste)
– 1 teaspoon grated ginger
– Salt and pepper to taste
Instructions
1. Bring the broth to a boil in a large saucepan.
2. Add the ramen noodles and cook for 2-3 minutes, until tender.
3. Stir in the shredded chicken (or tofu), mushrooms, carrots, and green onions. Cook for an additional 1-2 minutes until the vegetables are slightly softened.
4. Remove from heat and stir in the soy sauce, sesame oil, chili garlic sauce, and grated ginger. Season with salt and pepper to taste.
5. Ladle the ramen into bowls and top with the soft-boiled egg, if using.
