Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 4 tablespoons unsalted butter, melted
– 3/4 cup buttermilk
– 1/4 cup granulated sugar
– 1/2 cup raisins (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line it with paper liners.
2. In a large mixing bowl, whisk together the flour, baking soda, and salt.
3. In a separate bowl, combine the melted butter, buttermilk, and sugar. Stir until the sugar has dissolved.
4. Pour the buttermilk mixture into the dry ingredients and stir just until combined. Fold in the raisins, if using.
5. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a variation, try adding a handful of chopped walnuts or a sprinkle of caraway seeds to the batter. These muffins are best enjoyed the same day but can be stored in an airtight container for up to 3 days.
