Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 1 pound boneless, skinless chicken breasts, cubed

– 6 cups chicken broth

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– Salt and pepper to taste

– 2 cups baby spinach

– 1/4 cup grated Parmesan cheese (optional)


Instructions

1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 3-4 minutes until translucent.

2. Add the garlic, carrots, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables are slightly softened.

3. Add the cubed chicken, chicken broth, oregano, and basil. Season with salt and pepper to taste.

4. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.

5. Stir in the baby spinach and let it wilt for 2-3 minutes.
