Description

Indulge in the rich, creamy flavors of this Italian Zuppa Toscana Casserole – a comforting and satisfying dish that’s perfect for the whole family.


Ingredients

1 pound Italian sausage, casings removed

1 onion, diced

3 cloves garlic, minced

4 cups chicken broth

2 pounds Yukon Gold potatoes, peeled and cubed

2 cups heavy cream

4 cups chopped kale

1 cup grated Parmesan cheese

Salt and pepper to taste


Instructions

1. Preheat the oven to 375°F.

2. In a large skillet, cook the sausage over medium heat until browned, 5-7 minutes, breaking it up as it cooks. Transfer the sausage to a paper towel-lined plate.

3. Add the onion to the same skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.

4. Pour in the chicken broth and add the cubed potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

5. Stir in the heavy cream and kale. Simmer for 5 minutes more.

6. Transfer the mixture to a 9×13-inch baking dish. Top with the cooked sausage and Parmesan cheese.

7. Bake for 20-25 minutes, until the cheese is melted and bubbly.

8. Let cool for 5 minutes before serving.

Notes

For a spicier version, add a teaspoon of red pepper flakes to the recipe. You can also use Italian sausage links and slice them before cooking.
