Description

Jalapeño Peanut Brittle is a delightful sweet and spicy treat that’s quick and easy to make at home. This crunchy, caramelized peanut brittle is infused with the heat of fresh jalapeño peppers for a uniquely addictive flavor.

Ingredients

– 1 cup granulated sugar

– 1/2 cup light corn syrup

– 1/4 cup unsalted butter

– 1/4 teaspoon salt

– 1 1/2 cups roasted, salted peanuts

– 2 tablespoons finely chopped fresh jalapeño peppers (seeds and membranes removed for less heat, if desired)

Instructions

1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

2. In a medium saucepan, combine the sugar, corn syrup, butter, and salt. Cook over medium heat, stirring constantly, until the mixture reaches 300°F on a candy thermometer.

3. Remove from heat and quickly stir in the peanuts and chopped jalapeño peppers. Immediately pour the mixture onto the prepared baking sheet, spreading it out as thin as possible.

4. Allow the brittle to cool completely, about 30 minutes. Once hardened, break it into pieces and enjoy!

Notes

– For a less spicy version, use fewer jalapeños or omit the seeds and membranes.

– Store the Jalapeño Peanut Brittle in an airtight container at room temperature for up to 2 weeks.
