Description

Karpatka Cake is a beloved Polish pastry with a creamy, comforting flavor. This classic dessert features delicate layers of flaky dough filled with a rich, vanilla-infused cream, creating a truly indulgent treat.


Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 2 cups heavy cream

– 1/4 cup powdered sugar


Instructions

1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking pan.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.

4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Spread the dough evenly into the prepared baking pan.

5. Bake for 18-20 minutes, or until the crust is golden brown. Allow to cool completely in the pan.

6. In a large bowl, beat the heavy cream with the powdered sugar until stiff peaks form.

7. Carefully split the cooled cake horizontally into two even layers. Spread the whipped cream between the layers and on top of the cake.

8. Refrigerate the Karpatka Cake for at least 2 hours before serving to allow the cream to set.

Notes

For a richer flavor, you can add a tablespoon of vanilla bean paste to the whipped cream. Garnish the top of the cake with a dusting of additional powdered sugar or shaved chocolate for extra elegance.
