Description

Tender, juicy chicken breasts marinated in a bright, tropical citrus marinade and grilled to perfection. This easy summer recipe is bursting with bold island-inspired flavors that will transport you to the Florida Keys.


Ingredients

– 1.5 pounds boneless, skinless chicken breasts

– 1/2 cup freshly squeezed orange juice

– 1/4 cup freshly squeezed lime juice

– 2 tablespoons olive oil

– 2 garlic cloves, minced

– 1 teaspoon ground cumin

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon crushed red pepper flakes

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. In a large resealable plastic bag or shallow baking dish, combine the orange juice, lime juice, olive oil, garlic, cumin, paprika, red pepper flakes, salt, and black pepper. Add the chicken breasts and turn to coat evenly. Cover or seal and refrigerate for 10-30 minutes.

2. Preheat grill to medium-high heat (around 400°F).

3. Remove the chicken from the marinade, discarding any remaining marinade. Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F.

4. Transfer the grilled chicken to a cutting board and let rest for 5 minutes before slicing or serving.

Notes

– For best results, marinate the chicken for at least 15-30 minutes to allow the flavors to fully develop.

– Serve the grilled chicken with grilled pineapple, a tropical salad, and fresh citrus wedges for a complete island-inspired meal.
