Ingredients
– 1 pound beef sirloin, thinly sliced
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tablespoon grated ginger
– 1/4 cup soy sauce
– 2 tablespoons brown sugar
– 2 cups beef broth
– 1 cup water
– 2 carrots, peeled and sliced
– 2 cups chopped cabbage
– 2 green onions, sliced
– 1 teaspoon sesame oil
– Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat.
2. Add the sliced beef and sear on both sides until browned, about 2-3 minutes per side. Remove the beef from the pot and set aside.
3. Reduce the heat to medium, add the onion to the pot, and sauté until translucent, about 5 minutes.
4. Add the garlic and ginger and cook for 1 minute, until fragrant.
5. Pour in the soy sauce and brown sugar, stirring to combine. Bring the mixture to a simmer.
6. Add the beef broth, water, carrots, and cabbage. Return the seared beef to the pot.
7. Bring the stew to a boil, then reduce the heat and simmer for 20-25 minutes, until the beef is tender and the vegetables are cooked through.
8. Stir in the sliced green onions and sesame oil. Season with salt and pepper to taste.
9. Serve hot, garnished with additional green onions and sesame seeds if desired. Enjoy with steamed rice.

This stew can be made ahead of time and reheated. The flavors will only improve the longer it sits. You can also adjust the amount of vegetables or protein to your liking.
