Ingredients
– 1 pound bulgogi-style beef, sliced thin
– 2 cups shredded cabbage
– 1 cup diced carrots
– 1 cup diced cucumber
– 1 cup kimchi, chopped
– 1/2 cup gochujang (Korean chili paste)
– 1/4 cup sour cream
– 2 tablespoons sesame oil
– 1 tablespoon rice vinegar
– 1 teaspoon sesame seeds
– 8 large tortillas
Instructions
1. In a large skillet, sauté the bulgogi-style beef over medium-high heat until cooked through and slightly charred, about 5-7 minutes. Transfer to a plate and set aside.
2. In the same skillet, sauté the cabbage, carrots, and cucumber until slightly softened, about 3-4 minutes. Remove from heat and set aside.
3. In a small bowl, mix together the gochujang, sour cream, sesame oil, and rice vinegar to create the creamy, spicy sauce.
4. To assemble the burritos, lay a tortilla flat and spread a spoonful of the gochujang sauce down the center. Top with a portion of the sautéed beef and vegetables, then sprinkle with sesame seeds.
5. Carefully roll the burrito, tucking in the sides as you go, to create a tight, compact wrap.
6. Serve the Korean-Style Burritos immediately, or wrap in foil to enjoy later.
Notes
For a milder version, reduce the amount of gochujang used in the sauce. You can also customize the fillings to your liking, adding or substituting ingredients such as sliced avocado, shredded cheese, or fresh cilantro.
