Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 garlic cloves, minced
– 2 cans (14.5 oz each) diced tomatoes
– 1 can (6 oz) tomato paste
– 4 cups beef broth
– 2 cups water
– 1 tsp dried oregano
– 1 tsp dried basil
– 1/2 tsp red pepper flakes (optional)
– Salt and pepper to taste
– 8 oz lasagna noodles, broken into 1-inch pieces
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
Instructions
1. – In a skillet, brown the ground beef over medium-high heat. Drain excess fat.
2. – Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
3. – Transfer the beef mixture to a Crockpot.
4. – Add the diced tomatoes, tomato paste, beef broth, water, oregano, basil, and red pepper flakes (if using). Season with salt and pepper.
5. – Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
6. – During the last 30 minutes of cooking, add the broken lasagna noodles and stir to combine.
7. – Serve the soup hot, topped with shredded mozzarella and grated Parmesan cheese.
Notes
– For a creamier soup, stir in 1/2 cup of heavy cream or half-and-half at the end.
– Customize the soup by adding your favorite lasagna fillings, such as sliced mushrooms, spinach, or ricotta cheese.
– Freeze leftover soup in airtight containers for up to 3 months.
