Ingredients
– 8 ounces linguine or spaghetti pasta
– 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1/2 cup freshly grated Parmesan cheese
– Zest and juice of 1 lemon
– Salt and freshly ground black pepper, to taste
– Chopped fresh parsley for garnish
Instructions
1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and sauté for 3-4 minutes, until crisp-tender.
3. Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
4. Add the cooked pasta, Parmesan cheese, lemon zest, and lemon juice to the skillet. Toss everything together until well combined and the pasta is evenly coated in the lemon-Parmesan sauce.
5. Season with salt and pepper to taste.
6. Serve the Lemon Asparagus Pasta immediately, garnished with chopped fresh parsley.
Notes
For a creamier sauce, you can add a splash of heavy cream or half-and-half to the skillet before tossing with the pasta. You can also add grilled or sautéed chicken or shrimp for a heartier meal.
