Lemon Capellini Salad is a refreshing and flavorful pasta dish that’s perfect for summer. Made with tender capellini noodles, crisp vegetables, and a tangy lemon vinaigrette, it’s a bright and versatile side or light main course.
Ingredients
– 8 ounces capellini pasta
– 1 cup halved cherry tomatoes
– 1 cup diced cucumber
– 1/2 cup diced red bell pepper
– 1/4 cup thinly sliced red onion
– 2 tablespoons chopped fresh parsley
– 2 tablespoons chopped fresh basil
– 3 tablespoons olive oil
– 2 tablespoons lemon juice
– 1 tablespoon white wine vinegar
– 1 teaspoon Dijon mustard
– 1 garlic clove, minced
– Salt and pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the capellini according to package instructions until al dente. Drain and rinse with cold water to cool.
2. In a large bowl, combine the cooked capellini, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and basil.
3. In a small bowl, whisk together the olive oil, lemon juice, vinegar, Dijon mustard, and garlic. Season with salt and pepper to taste.
4. Pour the lemon vinaigrette over the salad and toss gently to coat. Refrigerate for at least 30 minutes to allow the flavors to meld.
5. Serve chilled or at room temperature.
Notes
For best results, use the freshest, ripest produce available. You can also add grilled or roasted chicken to make this a more substantial main dish. The salad can be made up to a day in advance and stored in the refrigerator.
