Ingredients
– 1/4 cup chia seeds
– 1 cup full-fat coconut milk
– 1/4 cup fresh lemon juice
– 2 tablespoons honey
– 1 teaspoon vanilla extract
– 1 tablespoon lemon zest
Instructions
1. In a medium bowl, whisk together the chia seeds, coconut milk, lemon juice, honey, and vanilla extract until well combined.
2. Cover the bowl and refrigerate for at least 2 hours, or until the pudding has thickened to your desired consistency, stirring occasionally.
3. Once thickened, stir in the lemon zest.

Notes
