Description

Loaded Potato Soup is a creamy, indulgent, and incredibly comforting dish that’s perfect for chilly days. Packed with tender potatoes, crispy bacon, melty cheese, and fresh chives, this soup is sure to warm you up from the inside out.


Ingredients

– 6 slices bacon, diced

– 1 onion, diced

– 3 cloves garlic, minced

– 3 pounds potatoes, peeled and diced

– 4 cups chicken broth

– 1 cup heavy cream

– 1 teaspoon dried thyme

– Salt and pepper to taste

– 1 cup shredded cheddar cheese

– 2 tablespoons chopped fresh chives


Instructions

1. – In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, reserving the bacon grease.

2. – Add the diced onion to the bacon grease and sauté for 5-7 minutes, until softened.

3. – Add the minced garlic and cook for an additional minute, until fragrant.

4. – Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, until the potatoes are tender.

5. – Using an immersion blender or regular blender, blend a portion of the soup until it reaches your desired level of creaminess. Be careful when blending hot liquids.

6. – Stir in the heavy cream and dried thyme. Season with salt and pepper to taste.

7. – Ladle the soup into bowls and top with the reserved crispy bacon, shredded cheddar cheese, and chopped fresh chives.

Notes

For a thicker soup, you can mash some of the potatoes against the side of the pot. You can also add additional toppings like sour cream, green onions, or crumbled bacon.
