Description

Indulge in the sweet, creamy, and tropical flavors of authentic Mango Sticky Rice, a beloved Thai dessert. The combination of sticky rice, coconut milk, and fresh mangoes creates a truly irresistible treat.


Ingredients

– 1 cup sweet (glutinous) rice, soaked for at least 4 hours or overnight

– 1 (13.5 oz) can coconut milk

– 1/2 cup granulated sugar

– 1/4 teaspoon salt

– 2 large ripe mangoes, peeled and sliced


Instructions

1. Drain the soaked rice and place it in a steamer basket. Steam the rice for 15-20 minutes, or until it is tender and translucent.

2. In a saucepan, combine the coconut milk, sugar, and salt. Bring the mixture to a simmer, stirring occasionally, until the sugar has dissolved.

3. Add the cooked rice to the coconut milk mixture and stir gently to combine. Cook for 5-10 minutes, or until the rice has absorbed the coconut milk and become creamy.

4. Remove the rice from heat and let it cool slightly. Serve the Mango Sticky Rice warm or chilled, topped with fresh mango slices.

Notes

For a creamier texture, you can add an extra 1/4 cup of coconut milk to the rice mixture. Adjust the sugar to your desired sweetness level. This dessert is best enjoyed immediately, but leftovers can be refrigerated for up to 3 days.
