Description

These Maple Roasted Parsnips with Thyme are a simple yet flavorful side dish that brings warmth and coziness to any meal. The natural sweetness of the parsnips is perfectly complemented by the aromatic thyme and rich maple glaze, creating a dish that’s both comforting and impressive.

Ingredients

– 2 pounds parsnips, peeled and cut into 1-inch pieces

– 3 tablespoons olive oil

– 3 tablespoons maple syrup

– 1 tablespoon fresh thyme leaves, plus more for garnish

– 1 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme leaves, salt, and pepper until well coated.

3. Spread the parsnips in a single layer on a baking sheet.

4. Roast for 25-30 minutes, flipping the parsnips halfway through, until they are tender and caramelized.

5. Garnish with additional fresh thyme leaves and serve hot.

Notes

For a more savory version, try adding a sprinkle of smoked paprika or a dash of ground cinnamon. Leftovers can be reheated in the oven or enjoyed cold as a salad topping.
