Description

Ingredients

– 2 (15 oz) cans of mixed beans, drained and rinsed

– 1 cup fresh cilantro, chopped

– 2 tablespoons olive oil

– 2 tablespoons lime juice (about 1 lime)

– 1 teaspoon lime zest

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a large bowl, combine the drained and rinsed beans, chopped cilantro, olive oil, lime juice, lime zest, salt, and black pepper. Toss gently to coat the beans evenly.

2. Cover and refrigerate the salad for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
