Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 2 tablespoons hot cocoa mix
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 12 large marshmallows, cut in half
Instructions
1. Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, hot cocoa mix, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until combined.
4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
5. Scoop 2 tablespoons of dough and flatten it into a disc. Place a marshmallow half in the center and top with another 2 tablespoons of dough, sealing the edges to completely enclose the marshmallow.
6. Place the filled cookies on the prepared baking sheet, spacing them about 2 inches apart.
7. Bake for 12-14 minutes, or until the cookies are lightly golden on the edges.
8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a festive touch, you can dust the cooled cookies with powdered sugar or drizzle with melted chocolate. The cookies can be stored in an airtight container at room temperature for up to 5 days.
