Description

Ingredients

– 3 pounds Russet potatoes, peeled and cut into 1-inch cubes

– 1 cup whole milk

– 6 tablespoons unsalted butter

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1 cup shredded cheddar cheese

– 6 slices cooked bacon, crumbled

– 1 cup sour cream

– 2 tablespoons chopped fresh chives


Instructions

1. In a large pot, cover the potato cubes with cold water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 15-20 minutes, until potatoes are very tender when pierced with a fork.

2. Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash the potatoes with a potato masher or hand mixer until smooth and creamy.

3. Scoop the mashed potatoes into individual serving bowls or glasses. Top each portion with shredded cheddar cheese, crumbled bacon, a dollop of sour cream, and a sprinkle of chopped chives.
