Ingredients
– 2 cups all-purpose flour
– 2 tablespoons matcha powder
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 4 tablespoons unsalted butter, chilled and cubed
– 1 cup buttermilk
– 1 tablespoon honey
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together the all-purpose flour, matcha powder, baking soda, and salt.
3. Add the chilled, cubed butter to the dry ingredients and use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
4. Pour in the buttermilk and honey, and stir just until a shaggy dough forms. Do not overmix.
5. Turn the dough out onto a lightly floured surface and gently knead it a few times, just until it comes together.
6. Shape the dough into a round loaf and place it on the prepared baking sheet.
7. Use a sharp knife to score a deep cross on the top of the dough.
8. Bake for 20-25 minutes, or until the crust is golden brown and a toothpick inserted into the center comes out clean.
9. Allow the Matcha Irish Soda Bread to cool on the baking sheet for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a more pronounced matcha flavor, you can increase the matcha powder to 3 tablespoons. The bread can be stored at room temperature for up to 3 days, or frozen for up to 2 months.
