Ingredients
– 2 cups heavy cream
– 1 cup whole milk
– 3/4 cup granulated sugar
– 2 tablespoons matcha powder
– 1 teaspoon vanilla extract
– 1/2 cup shelled, roasted, and salted pistachios, chopped
Instructions
1. – In a medium saucepan, combine the heavy cream, milk, and sugar. Heat over medium, stirring occasionally, until the sugar has dissolved and the mixture is warm, but not boiling.
2. – Remove the saucepan from the heat and whisk in the matcha powder until fully incorporated and smooth.
3. – Stir in the vanilla extract.
4. – Pour the matcha-infused cream mixture into a shallow baking dish and place in the freezer. Freeze for 2 hours, stirring and scraping the edges every 30 minutes, until the mixture is partially frozen.
5. – Once partially frozen, transfer the mixture to a food processor and blend until smooth and creamy.
6. – Fold in the chopped pistachios.
7. – Return the ice cream to the freezer and freeze for an additional 2-3 hours, or until firm.
8. – Scoop and serve immediately, garnished with additional chopped pistachios if desired.
Notes
For a richer, creamier texture, use a higher ratio of heavy cream to milk. You can also experiment with different types of nuts, such as almonds or hazelnuts, in place of the pistachios.
