Ingredients
– 1 pound ground beef
– 1 cup breadcrumbs
– 2 large eggs
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1/2 cup ketchup
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9-inch springform pan.
2. In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic, ketchup, thyme, salt, and pepper. Mix until well incorporated.
3. Press half of the meatloaf mixture into the prepared springform pan, creating a flat, even layer.
4. Bake for 20 minutes.
5. Remove the pan from the oven and carefully place the remaining meatloaf mixture on top of the first layer, pressing it down gently to create a second layer.
6. Return the pan to the oven and bake for an additional 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
7. Let the meatloaf cake cool in the pan for 10 minutes, then release the springform ring and transfer the cake to a serving plate.
8. Slice and serve warm, garnished with fresh parsley if desired.
Notes
For a more uniform shape, you can line the springform pan with parchment paper before adding the meatloaf mixture. Experiment with different seasonings or add shredded cheese or chopped vegetables to the layers for additional flavors.
