Description

Indulge in the rich flavors of this Mediterranean Meatloaf, complemented by a creamy and aromatic garlic herb sauce. This quick and easy recipe is perfect for a weeknight dinner or a special occasion.


Ingredients

– 1 pound ground beef

– 1 cup breadcrumbs

– 1 egg

– 1/2 cup grated Parmesan cheese

– 1/4 cup finely chopped fresh parsley

– 2 cloves garlic, minced

– 1 teaspoon dried oregano

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons olive oil

– 1/2 cup mayonnaise

– 2 tablespoons lemon juice

– 1 tablespoon finely chopped fresh basil

– 1 tablespoon finely chopped fresh oregano

– 1 clove garlic, minced

– 1/4 teaspoon salt


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, parsley, 2 cloves of minced garlic, dried oregano, salt, and black pepper. Mix well until all the ingredients are evenly distributed.

3. Shape the mixture into a loaf and place it in a baking dish or on a rimmed baking sheet.

4. Bake the meatloaf for 30-35 minutes, or until it’s cooked through and the internal temperature reaches 165°F (75°C).

5. While the meatloaf is baking, prepare the garlic herb sauce. In a small bowl, mix together the mayonnaise, lemon juice, basil, oregano, 1 clove of minced garlic, and 1/4 teaspoon of salt.

6. Once the meatloaf is done, let it rest for 5 minutes before slicing and serving. Drizzle the garlic herb sauce over the top of the meatloaf or serve it on the side.

Notes

For a spicier kick, add a pinch of crushed red pepper flakes to the meatloaf mixture. You can also experiment with different herb combinations in the sauce, such as rosemary or thyme.
