Ingredients

– 4 medium sweet potatoes, halved lengthwise

– 1 (15 oz) can chickpeas, drained and rinsed

– 1 cup diced tomatoes

– 1/2 cup crumbled feta cheese

– 2 tablespoons olive oil

– 2 tablespoons freshly squeezed lemon juice

– 2 cloves garlic, minced

– 1/4 cup chopped fresh parsley

– 1 tablespoon chopped fresh oregano

– Salt and black pepper to taste


Instructions

1. Preheat the oven to 400°F (200°C).

2. Place the sweet potato halves, cut-side up, on a baking sheet. Bake for 25-30 minutes, or until the potatoes are fork-tender.

3. In a medium bowl, combine the chickpeas, diced tomatoes, feta cheese, olive oil, lemon juice, garlic, parsley, and oregano. Season with salt and black pepper to taste.

4. Once the sweet potatoes are cooked, let them cool slightly. Using a fork, gently fluff the insides of the potato halves, being careful not to break them.

5. Spoon the Mediterranean-inspired filling into the hollowed-out sweet potato halves.

6. Serve the stuffed sweet potatoes warm, garnished with additional fresh herbs if desired.
