Description

Ingredients

– 2 cans (15 oz each) black beans, drained and rinsed

– 1 onion, diced

– 3 cloves garlic, minced

– 1 jalapeño, seeded and diced (optional)

– 1 teaspoon ground cumin

– 1 teaspoon chili powder

– 1/2 teaspoon dried oregano

– 1/4 teaspoon smoked paprika

– 1 cup vegetable or chicken broth

– 2 tablespoons chopped fresh cilantro

– Salt and pepper to taste


Instructions

1. – In a large saucepan, sauté the onion and garlic over medium heat until softened, about 5 minutes.

2. – Add the jalapeño (if using), cumin, chili powder, oregano, and paprika. Cook for 2 minutes, stirring constantly, to toast the spices.

3. – Stir in the black beans and broth. Bring the mixture to a simmer and cook for 15-20 minutes, until the beans are heated through and the flavors have melded.

4. – Remove from heat and stir in the fresh cilantro. Season with salt and pepper to taste.

5. – Serve the Mexican Black Beans warm, over rice or with tortillas.

Notes

– For a creamier texture, you can partially mash some of the beans with a potato masher or the back of a spoon.

– Add a splash of lime juice or a dollop of sour cream for extra flavor.
