Ingredients
– 1 cup long-grain white rice
– 1 tablespoon olive oil
– 1 small onion, diced
– 3 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1 (14.5 oz) can diced tomatoes
– 1 1/2 cups chicken or vegetable broth
– 1 teaspoon salt
– 1/4 cup chopped fresh cilantro
– 1 lime, cut into wedges
Instructions
1. 1. Rinse the rice in a fine-mesh strainer until the water runs clear.
2. 2. In a large skillet or saucepan, heat the olive oil over medium heat. Add the onion and sauté for 2-3 minutes until translucent.
3. 3. Add the garlic, cumin, and chili powder. Cook for 1 minute, stirring constantly, until fragrant.
4. 4. Stir in the diced tomatoes (with their juice) and the broth. Bring the mixture to a boil.
5. 5. Add the rinsed rice and salt. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
6. 6. Remove from heat and fluff the rice with a fork. Stir in the chopped cilantro.
