Description

Ingredients

– 1 cup all-purpose flour

– 1 cup cornmeal

– 2 teaspoons baking powder

– 2 tablespoons granulated sugar

– 1/2 teaspoon salt

– 1 cup milk

– 2 large eggs

– 8 ounces hot dogs, cut into 1-inch pieces


Instructions

1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line it with paper liners.

2. In a large bowl, whisk together the all-purpose flour, cornmeal, baking powder, sugar, and salt.

3. In a separate bowl, whisk together the milk and eggs until well combined.

4. Pour the milk and egg mixture into the dry ingredients and stir just until combined, being careful not to overmix.

5. Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

6. Gently press a piece of hot dog into the center of each muffin.

7. Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes
