Ingredients
– 2 1/2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 4 medium Gala or Honeycrisp apples, peeled, cored, and sliced
– 1/2 cup granulated sugar
– 2 tablespoons miso paste
– 2 tablespoons unsalted butter
– 1 egg, beaten with 1 tablespoon water (for egg wash)
Instructions
1. In a food processor, combine the flour and salt. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.
2. Gradually add the ice water and pulse until the dough just begins to come together. Do not overmix.
3. Shape the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
4. In a large skillet, cook the apple slices, sugar, and miso paste over medium heat, stirring occasionally, until the apples are soft and the mixture is caramelized, about 15 minutes. Remove from heat and stir in the 2 tablespoons of butter until melted and incorporated.
5. Preheat the oven to 400°F (200°C).
6. On a lightly floured surface, roll the dough into a 12-inch circle, about 1/4-inch thick. Transfer to a parchment-lined baking sheet.
7. Spoon the miso caramel apple mixture onto the center of the dough, leaving a 2-inch border. Fold the dough over the filling, pleating it as you go.
8. Brush the exposed dough with the egg wash.
9. Bake for 30-35 minutes, or until the crust is golden brown. Allow to cool for at least 20 minutes before slicing and serving.
Notes
For a deeper caramel flavor, you can substitute brown sugar for the granulated sugar. Serve the galette warm, with a scoop of vanilla ice cream or a drizzle of additional caramel sauce.
