Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 1/2 cup warm water

– 2 tablespoons olive oil

– 1 pound boneless, skinless chicken breasts, diced

– 1 onion, finely chopped

– 2 cloves garlic, minced

– 1 teaspoon ground cumin

– 1 teaspoon paprika

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon cayenne pepper

– 1/4 cup chopped fresh parsley

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the flour and salt. Gradually add the warm water and olive oil, mixing until a smooth dough forms. Cover and let rest for 30 minutes.

2. In a skillet, sauté the chicken, onion, and garlic until the chicken is cooked through and the onion is softened, about 8-10 minutes.

3. Add the cumin, paprika, cinnamon, and cayenne to the skillet. Stir to coat the chicken mixture with the spices. Remove from heat and stir in the parsley. Season with salt and pepper to taste.

4. Divide the dough into 8 equal pieces. On a lightly floured surface, roll each piece into a thin, round flatbread.

5. Place a heaping spoonful of the chicken mixture in the center of each flatbread. Fold the dough over the filling and pinch the edges to seal.

6. Heat a large skillet or griddle over medium heat. Cook the Msmen for 2-3 minutes per side, or until golden brown and cooked through.

7. Serve the Moroccan Chicken-Stuffed Msmen warm, with additional parsley, lemon wedges, and your favorite dipping sauce.

Notes

For a deeper flavor, marinate the chicken in Moroccan spices for 30 minutes before cooking. You can also experiment with different fillings, such as roasted vegetables or a mixture of chicken and lamb.
