Ingredients
– 1 sheet refrigerated pie crust
– 8 oz. mushrooms, sliced
– 2 shallots, thinly sliced
– 2 tbsp. olive oil
– 4 oz. herbed goat cheese
– 2 tbsp. fresh parsley, chopped
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F.
2. – Roll out the pie crust and cut into 12 rounds using a 3-inch round cookie cutter. Press the rounds into a 12-cup mini muffin tin.
3. – In a skillet, sauté the mushrooms and shallots in olive oil until softened, about 5 minutes.
4. – Remove from heat and stir in the herbed goat cheese and parsley. Season with salt and pepper.
5. – Spoon the mushroom mixture into the prepared tart shells.
6. – Bake for 15-18 minutes, until the crust is golden brown.
7. – Serve warm and enjoy!
Notes
These tarts can be made ahead of time and reheated before serving. For a crunchier crust, blind bake the tart shells for 5-7 minutes before filling.
