Description

Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 2 celery stalks, sliced

– 3 cloves garlic, minced

– 2 teaspoons dried thyme

– 1 teaspoon dried rosemary

– 1/2 teaspoon ground black pepper

– 4 cups vegetable or chicken broth

– 2 cups diced potatoes

– 1 cup heavy cream

– 1 teaspoon salt

– 1/4 cup chopped fresh parsley


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.

3. Stir in the garlic, thyme, rosemary, and black pepper. Cook for 1 minute.

4. Pour in the broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the potatoes are tender.

5. Stir in the heavy cream and salt. Taste and adjust seasoning as needed.

6. Serve the Mystical Witch Soup hot, garnished with fresh parsley.

Notes
