Ingredients
– 1 pound raw shrimp, peeled and deveined
– 2 cups fresh or frozen corn kernels
– 1 onion, diced
– 2 cloves garlic, minced
– 2 tablespoons unsalted butter
– 2 tablespoons all-purpose flour
– 2 cups chicken or vegetable broth
– 1 cup heavy cream
– 1 teaspoon Cajun seasoning
– 1/2 teaspoon paprika
– Salt and black pepper to taste
– Chopped parsley for garnish
Instructions
1. In a large saucepan, melt the butter over medium heat.
2. Add the diced onion and sauté for 5 minutes until translucent.
3. Stir in the minced garlic and cook for an additional minute.
4. Sprinkle the flour over the onion mixture and whisk to combine, cooking for 1-2 minutes.
5. Gradually pour in the broth, whisking constantly to prevent lumps.
6. Stir in the heavy cream, Cajun seasoning, paprika, and a pinch of salt and pepper.
7. Bring the mixture to a simmer and add the shrimp and corn.
8. Cook for 10-12 minutes, stirring occasionally, until the shrimp is cooked through and the soup has thickened.
9. Taste and adjust seasoning as needed.
10. Ladle the hot bisque into bowls and garnish with fresh chopped parsley.
Notes
For a thicker bisque, you can blend a portion of the soup using an immersion blender or standard blender. Store leftovers in the refrigerator for up to 4 days.
