Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 1 large egg
– 2 teaspoons vanilla extract
Instructions
1. – Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
2. – In a medium bowl, whisk together the flour, baking powder, and salt.
3. – In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.
4. – Beat in the egg and vanilla extract until combined.
5. – Gradually add the dry ingredients to the wet ingredients and mix until just combined.
6. – Scoop the dough by the tablespoonful onto the prepared baking sheets, spacing them about 2 inches apart.
7. – Bake for 8-10 minutes, or until the edges are lightly golden.
8. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra soft and chewy cookies, be careful not to overbake. You can also add sprinkles or coarse sugar on top for a festive touch.
