Description
This rich and hearty Oktoberfest Stew is the ultimate comfort food, featuring tender chunks of beef, smoky sausage, and a blend of vegetables simmered in a flavorful broth infused with lager beer. It’s the perfect dish to enjoy on a chilly autumn evening.
Ingredients
– 2 lbs beef stew meat, cut into 1-inch cubes
– 1 lb smoked sausage, sliced into coins
– 3 medium potatoes, peeled and diced
– 3 carrots, peeled and sliced
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cups lager beer
– 4 cups beef broth
– 2 tbsp tomato paste
– 1 tsp caraway seeds
– 1 tsp paprika
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. – In a large Dutch oven or heavy-bottomed pot, brown the beef in batches over medium-high heat until well-seared on all sides. Remove beef and set aside.
2. – Add the sliced sausage to the pot and cook until lightly browned, about 3-4 minutes. Remove sausage and set aside.
3. – Reduce heat to medium, add the onions and garlic to the pot, and sauté for 2-3 minutes until fragrant.
4. – Pour in the lager beer, scraping up any browned bits from the bottom of the pot.
5. – Add the beef, sausage, potatoes, carrots, tomato paste, caraway seeds, paprika, salt, and pepper. Stir to combine.
6. – Pour in the beef broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 45-60 minutes, or until the beef and vegetables are tender.
7. – Taste and adjust seasoning as needed. Garnish with chopped parsley before serving.
Notes
This stew can be made in advance and reheated, as the flavors will continue to meld. It also freezes well for up to 3 months.
