Ingredients
– 1 pound beef stew meat, cubed
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 carrots, peeled and sliced
– 2 celery stalks, sliced
– 3 potatoes, peeled and diced
– 4 cups beef broth
– 2 cups water
– 2 bay leaves
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
2. Remove the beef from the pot and set aside. Add the onions, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
3. Pour in the beef broth and water. Add the diced potatoes, bay leaves, thyme, and parsley. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
4. Return the browned beef to the pot and let the soup simmer for an additional 5-10 minutes, or until the beef is cooked through and tender.
5. Season with salt and pepper to taste.
6. Serve hot, garnished with additional parsley if desired.
Notes
For a thicker soup, you can mash some of the potatoes against the side of the pot. You can also add other vegetables like green beans, corn, or peas. This soup can be made ahead and reheated, or frozen for later use.
