Description

Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 can (28 oz) crushed tomatoes

– 4 cups beef broth

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese


Instructions

1. 1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

2. 2. Add the onion and garlic to the pot and cook for 2-3 minutes until fragrant.

3. 3. Pour in the crushed tomatoes and beef broth. Bring the mixture to a boil.

4. 4. Add the broken lasagna noodles, oregano, basil, salt, and pepper. Reduce heat and simmer for 15-20 minutes, until the noodles are tender.

5. 5. Remove from heat and stir in the mozzarella and Parmesan cheeses.

6. 6. Serve hot, garnished with additional Parmesan if desired.

Notes

For a thicker soup, use less broth. For a thinner consistency, add more broth. Top with fresh basil, crushed red pepper flakes, or dollops of ricotta cheese for extra flavor.
