Description

Parmesan Pesto Roasted Potatoes are a quick and easy side dish that’s bursting with flavor. Crispy roasted potatoes are tossed in a fragrant pesto sauce and then topped with a golden parmesan crust for a truly irresistible side.


Ingredients

– 2 pounds Yukon Gold potatoes, cut into 1-inch cubes

– 1/4 cup basil pesto

– 1/2 cup grated parmesan cheese

– 2 tablespoons olive oil

– 1 teaspoon garlic powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, toss the cubed potatoes with the basil pesto until evenly coated.

3. Spread the pesto-coated potatoes in a single layer on a baking sheet. Sprinkle the grated parmesan cheese evenly over the top.

4. Drizzle the olive oil over the potatoes and season with garlic powder, salt, and black pepper.

5. Roast for 25-30 minutes, or until the potatoes are tender and the parmesan is golden brown and crispy.

6. Serve hot and enjoy!

Notes

For an extra crispy crust, broil the potatoes for 2-3 minutes at the end of the cooking time. You can also use store-bought pesto or make your own homemade version.
