Ingredients
– 5 cups baby arugula
– 2 ripe pears, sliced
– 1/4 cup crumbled feta cheese
– 2 tablespoons toasted walnuts
– 2 tablespoons honey
– 2 tablespoons apple cider vinegar
– 1 tablespoon Dijon mustard
– 2 tablespoons extra virgin olive oil
– Salt and freshly ground black pepper to taste
Instructions
1. In a large salad bowl, combine the baby arugula, sliced pears, crumbled feta cheese, and toasted walnuts.
2. In a small bowl, whisk together the honey, apple cider vinegar, Dijon mustard, and olive oil until emulsified.
