Ingredients

– 8 cups chicken or vegetable broth

– 8 ounces wide egg noodles

– 1 onion, diced

– 3 cloves garlic, minced

– 1 teaspoon ground turmeric

– 1 teaspoon ground cumin

– 1 teaspoon dried dill

– 1 lemon, juiced

– Salt and pepper to taste

– Chopped fresh parsley, for garnish


Instructions

1. In a large pot, bring the broth to a boil over high heat.

2. Add the egg noodles and cook for 8-10 minutes, until tender.

3. Reduce the heat to medium and add the onion and garlic. Cook for 2-3 minutes, until fragrant.

4. Stir in the turmeric, cumin, and dried dill. Season with salt and pepper to taste.

5. Remove from heat and stir in the lemon juice.

6. Ladle the soup into bowls and garnish with fresh chopped parsley.

Notes

For a heartier meal, you can add shredded chicken or chickpeas to the soup. The lemon juice adds a bright, citrusy note, but you can adjust the amount to your taste. This soup also freezes well for up to 3 months.
