Ingredients
– 8 slices crusty bread
– 1 cup fresh basil pesto
– 2 medium tomatoes, sliced
– 8 ounces mozzarella cheese, sliced
– 2 tablespoons balsamic glaze (optional)
Instructions
1. Spread a generous amount of pesto on 4 slices of bread.
2. Top the pesto with slices of tomato and mozzarella cheese.
3. Place the remaining 4 bread slices on top to create 4 sandwiches.
4. Heat a grill pan or panini press over medium heat. Cook the sandwiches for 2-3 minutes per side, or until the bread is toasted and the cheese is melted.
5. Slice the sandwiches in half and drizzle with balsamic glaze, if desired.
