Description

These vibrant, crunchy Pickled Sweet Peppers and Onions are the perfect condiment or side dish. Tangy, sweet, and full of flavor, they’re a delightful addition to sandwiches, tacos, salads, and more.


Ingredients

– 3 cups sliced sweet bell peppers (red, yellow, and orange)

– 1 cup thinly sliced red onion

– 1 cup apple cider vinegar

– 1/2 cup granulated sugar

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/2 teaspoon crushed red pepper flakes (optional)


Instructions

1. In a large bowl, combine the sliced bell peppers and onion.

2. In a small saucepan, combine the apple cider vinegar, sugar, salt, and black pepper. Bring to a boil, stirring until the sugar dissolves.

3. Pour the hot vinegar mixture over the peppers and onions. Stir to combine.

4. Add the crushed red pepper flakes, if using.

5. Transfer the mixture to a clean, sterilized jar. Seal the jar and refrigerate for at least 24 hours before serving.

6. The pickled peppers and onions will keep in the refrigerator for up to 2 weeks.

Notes

– For a spicier version, add more crushed red pepper flakes.
