Ingredients
– 3 medium beets, peeled and chopped
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 cup vegetable broth
– 1/4 cup heavy cream
– 1 tablespoon red wine vinegar
– 1 teaspoon dried basil
– Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F. Place the chopped beets on a baking sheet and roast for 25-30 minutes, until tender.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for 5-7 minutes until softened.
3. Transfer the roasted beets to a blender or food processor. Add the sautéed onion and garlic, vegetable broth, heavy cream, red wine vinegar, and dried basil. Blend until smooth and creamy.
