Ingredients
– 6 cups rice or corn chex cereal
– 1 cup roasted and salted pistachios, chopped
– 1 cup white chocolate chips
– 1/2 cup creamy peanut butter
– 1/4 cup unsalted butter
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
Instructions
1. In a large mixing bowl, combine the rice or corn chex cereal and chopped pistachios. Set aside.
2. In a medium saucepan, melt the white chocolate chips, peanut butter, and butter over low heat, stirring constantly until smooth.
3. Remove the saucepan from heat and stir in the vanilla extract and salt.
4. Pour the melted chocolate mixture over the cereal and pistachios, and stir gently until the cereal is evenly coated.
5. Spread the coated cereal mixture onto a baking sheet or parchment paper and allow it to cool completely, about 30 minutes.
6. Once cooled, break up any large clumps and enjoy your homemade Pistachio Puppy Chow!
Notes
For a sweeter version, you can add 1/4 cup of powdered sugar to the melted chocolate mixture. Pistachio Puppy Chow can be stored in an airtight container at room temperature for up to 1 week.
