Description

Savor the delightful combination of juicy pork, aromatic chives, and a perfectly crispy skirt in these homemade pork and chive potstickers. Enjoy them as a tasty appetizer or side dish.


Ingredients

– 1 pound ground pork

– 1 cup finely chopped chives

– 2 tablespoons soy sauce

– 1 tablespoon sesame oil

– 1 tablespoon grated ginger

– 1/4 teaspoon white pepper

– 1 package (14 oz) wonton wrappers

– 2 tablespoons vegetable oil


Instructions

1. In a large bowl, combine the ground pork, chopped chives, soy sauce, sesame oil, grated ginger, and white pepper. Mix well until the ingredients are evenly distributed.

2. Place a wonton wrapper on a clean surface, keeping the remaining wrappers covered to prevent drying. Place about 1 tablespoon of the pork mixture in the center of the wrapper.

3. Moisten the edges of the wrapper with water, then fold the wrapper in half to form a half-moon shape. Crimp and pleat the edges to seal the potsticker.

4. Heat the vegetable oil in a large non-stick skillet over medium-high heat. Working in batches, carefully place the potstickers in the skillet, flat side down. Cook for 2-3 minutes, or until the bottoms are golden-brown and crispy.

5. Add 1/4 cup of water to the skillet, then cover and steam the potstickers for 3-4 minutes, or until the pork is cooked through.

6. Remove the lid and continue cooking for 1-2 minutes, or until the bottoms are crispy and golden-brown.

7. Serve the pork and chive potstickers hot, with your desired dipping sauce on the side.

Notes

For best results, use freshly ground pork and high-quality wonton wrappers. The pleating technique takes some practice, but you’ll get the hang of it quickly. Leftover potstickers can be frozen for up to 3 months.
