Description
Juicy pork tenderloin smothered in a sweet and tangy apple cider glaze, served over a bed of creamy sweet potato mash. This comforting and flavorful dish makes for an easy and delicious weeknight meal.
Ingredients
– 1 lb pork tenderloin
– 1 cup apple cider
– 2 tbsp brown sugar
– 2 tbsp unsalted butter
– 2 lbs sweet potatoes, peeled and cubed
– 1/4 cup milk
– Salt and pepper to taste
– Fresh thyme for garnish
Instructions
1. – Preheat oven to 400°F.
2. – Season the pork tenderloin with salt and pepper.
3. – In a large oven-safe skillet, sear the pork over medium-high heat until browned on all sides, about 2-3 minutes per side.
4. – Transfer the skillet to the preheated oven and roast the pork until it reaches an internal temperature of 145°F, about 15-20 minutes.
5. – Remove the pork from the oven and let it rest for 5 minutes. Slice the tenderloin.
6. – In the same skillet, combine the apple cider and brown sugar. Bring to a simmer and cook until the mixture thickens to a glaze, about 5-7 minutes.
7. – Add the sliced pork back to the skillet and coat in the apple cider glaze.
8. – Meanwhile, place the cubed sweet potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
9. – Drain the sweet potatoes and mash them with the milk. Season with salt and pepper.
10. – Serve the pork tenderloin with the sweet potato mash, drizzling any remaining glaze over the top. Garnish with fresh thyme.
