Description

Indulge in the ultimate creamy Potato Bacon Soup, a comforting and flavorful dish that’s ready in just 30 minutes. This classic comfort food is perfect for cozy weeknights, with a rich and velvety texture that’s sure to warm you up from the inside out.

Ingredients

– 6 slices of bacon, chopped

– 1 onion, diced

– 3 cloves of garlic, minced

– 3 cups of peeled and diced potatoes

– 4 cups of chicken broth

– 1 cup of heavy cream

– 1 teaspoon of dried thyme

– Salt and pepper to taste

Instructions

1. 1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, reserving the bacon fat.

2. 2. Add the diced onion to the bacon fat and sauté for 5-7 minutes, until softened.

3. 3. Add the minced garlic and sauté for an additional minute until fragrant.

4. 4. Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

5. 5. Using an immersion blender, puree the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender in batches and blend until desired consistency.

6. 6. Stir in the heavy cream and dried thyme, and season with salt and pepper to taste.

7. 7. Serve the Potato Bacon Soup hot, garnished with the reserved crispy bacon pieces.

Notes

For a thicker soup, you can add an additional 1/2 cup of heavy cream or let the soup simmer for a few more minutes. You can also adjust the amount of bacon to your preference. This soup is also delicious with grated cheddar cheese or chopped scallions as toppings.
