Ingredients
– 1 cup warm milk
– 2 1/4 teaspoons active dry yeast
– 1/4 cup granulated sugar
– 1 egg
– 1/4 cup butter, melted
– 1 teaspoon salt
– 4 cups all-purpose flour
– 1 cup pumpkin puree
– 2 teaspoons ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 2 tablespoons strong brewed coffee or espresso, cooled
Cream Cheese Frosting:
– 4 ounces cream cheese, softened
– 1/4 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract
Instructions
1. – In a large bowl, combine the warm milk, yeast, and sugar. Let sit for 5-10 minutes until foamy.
2. – Add the egg, melted butter, and salt, and stir to combine.
3. – In a separate bowl, whisk together the flour, pumpkin puree, cinnamon, ginger, nutmeg, and cloves.
4. – Add the dry ingredients to the yeast mixture and mix until a soft dough forms.
5. – Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
6. – Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
7. – Punch down the dough and roll it out into a large rectangle, about 1/4-inch thick.
8. – Spread the cooled coffee over the dough, then tightly roll it up from the long side.
9. – Cut the roll into 12 equal pieces and place them in a greased 9×13-inch baking dish.
10. – Cover and let rise for 30 minutes.
11. – Preheat the oven to 350°F.
12. – Bake the cinnamon rolls for 22-25 minutes, until golden brown.
13. – While the rolls are baking, make the cream cheese frosting. In a medium bowl, beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla and mix until well combined.
14. – Spread the frosting over the warm cinnamon rolls and serve immediately.
Notes
– For a richer flavor, use heavy cream or half-and-half instead of regular milk.
– Substitute strongly brewed coffee for the espresso, if desired.
– Top with chopped pecans or walnuts for added texture.
